Caminante originated in an area known as 'Los Altos de Jalisco'; a beautiful landscape surrounded by the blue flecks of the Tequilana agave. To create such a high-quality tequila in this privileged region, it requires patient waiting for up to ten years. From here, we begin a delicate process of honey production, extraction, fermentation, distillation, and a resting period of several months. 65, 66, 67]

Our mezcal bears the artisanal classification due to its production method, which dates back to our ancestors. To obtain our artisanal mezcal, the maguey is cooked in underground ovens heated by wood. Once it reaches the ideal temperature, it is ground using stone mills. Fermentation takes place in aluminum vats, and distillation takes place in copper stills with the fruit, then rests in a glass to preserve its magical flavor.

The Art and Diversity of Agave Spirits

Artisanal process of agave spirits

Tequila

Born in the valleys and highlands of Jalisco, tequila is made exclusively from blue agave (Agave tequilana Weber). Its process is meticulous: slow cooking, natural fermentation, and double distillation. The result: fresh flavors, citrus and herbal notes, and a touch of sweetness. 33]

Mezcal

Mezcal is Mexico's free spirit. It can be made from over 30 types of agave, such as espadín, tobalá, or madrecuixe, each bringing unique nuances. Its stone oven cooking gives it that unmistakable smoky touch. Mezcal is complex, earthy, floral, sometimes fruity, always surprising. 36]

Raicilla

Raicilla is the best-kept secret of the coasts and mountains of Jalisco and Nayarit. It is mainly made from lechuguilla and maximiliana agave, using ancestral methods. Its profile is fresh, herbal, with citrus notes and a mineral finish. 39, 40]

Sotol

Native to northern Mexico, sotol is distilled from the Dasylirion plant (not agave, but sharing its spirit). Its flavor is herbal, spicy, with hints of pepper and damp earth. It is the spirit of the desert, strong and elegant. 43, 44]
